Broccoli Cauliflower Cheese Soup
Ingredients:
1 head broccoli, chopped into florets
1 head cauliflower, chopped into florets
1 medium onion, diced
2 cloves garlic, minced
4 cups (950 ml) chicken or vegetable broth
2 cups (480 ml) milk (or cream for a richer soup)
2 cups (225 g) shredded cheddar cheese
2 tablespoons butter
2 tablespoons all-purpose flour
Salt and pepper to taste
1/4 teaspoon nutmeg (optional)
1/2 teaspoon paprika (optional)
1/2 cup shredded parmesan cheese (optional, for extra flavor)
