Tuna Croquettes with Ricotta

Ingredients:

Serves 6
250 g Ricotta cheese
250 g drained tuna in oil
20 g capers (optional)
Black or green olives (optional)
3 to 4 tablespoons breadcrumbs
2 tablespoons chopped parsley
1 teaspoon lemon zest
1 tablespoon lemon juice
2 small eggs or 1 large
50 g Parmesan cheese or other
60 g grated Emmental
1/2 teaspoon sweet pepper powder
1 good pinch garlic powder
Salt and pepper to taste
Breadcrumbs for breading
Peanut or sunflower oil for frying
