Ingredients
4 cups chicken broth
3 garlic cloves, minced
1 medium onion, chopped
1 pound kielbasa sausage, sliced
2 carrots, peeled and chopped
2 medium potatoes, peeled and diced
1 can (14.5 oz) diced tomatoes, with juices
½ teaspoon paprika
½ teaspoon smoked paprika (optional, for extra spice)
Salt and pepper, to taste
½ cup heavy cream (optional, for a creamy texture)
Fresh parsley, chopped (for garnish)
Instructions
Brown the Kielbasa
Heat a large skillet over medium-high heat. Add the sliced kielbasa and cook for 5-6 minutes until it starts to turn golden brown. Remove the kielbasa from the skillet and set aside.
Sauté Aromatics
In the same skillet, add the minced garlic and chopped onion. Lower the heat and sauté until the onion is translucent and fragrant, about 4-5 minutes.
Cook the Vegetables
Add the chopped carrots and diced potatoes to the skillet. Cook for an additional 3-4 minutes, stirring occasionally, to allow the vegetables to soak up the flavors.
Combine Ingredients
