Ingredients:
1 cup of dried lentils (green or brown)

1 teaspoon of dried thyme (or 1 tablespoon of fresh thyme)

Instructions:
1. Prepare the Lentils
Rinse and Sort: Rinse the lentils under cold water, picking out any debris or damaged lentils. Drain and set aside.
Cook the Lentils: In a large pot, bring the vegetable broth or water to a boil. Add the lentils, bay leaf, and a pinch of salt. Reduce the heat and let the lentils simmer uncovered for about 20-25 minutes, or until tender but not mushy. Drain any excess liquid and discard the bay leaf.
2. Prepare the Leeks and Vegetables
Clean the Leeks: Leeks can have dirt trapped between their layers, so make sure to clean them thoroughly. Slice the leeks lengthwise, then chop them into thin slices. Rinse them under cold water and drain well.
Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for about 1 minute until fragrant. Add the leeks, carrot, and celery, and cook for about 5-7 minutes, stirring occasionally, until the vegetables are softened.
3. Combine and Cook
Mix the Lentils and Vegetables: Add the cooked lentils to the skillet with the sautéed vegetables. Stir in the thyme, smoked paprika (if using), and additional salt and pepper to taste.
Simmer Together: Reduce the heat to low and let the mixture simmer together for about 5-10 minutes, allowing the flavors to meld and the lentils to absorb the seasoning.
