These pumpkin cookies are not only a sweet treat for cozy evenings but also a great way to bring some festive spirit into your home. They remind me of my childhood in the Midwest, where nearby pumpkin patches were a staple of fall weekends. These cookies are quick and easy to make, perfect for when you’re juggling a busy work week and still want to indulge your inner baker.
These pumpkin cookies pair perfectly with a warm cup of spiced chai or hot apple cider. They’re fantastic as an afternoon snack or as a dessert alongside a dollop of whipped cream or a scoop of vanilla ice cream. For a cozy fall gathering, serve them alongside a platter of assorted nuts and dried fruits to create a festive spread.

1 cup unsalted butter, softened
1 cup white sugar
1/2 cup packed brown sugar
1 tsp vanilla extract
