Cream of Mushroom Soup
Ingredients:
– 200g mushrooms (button or cremini), sliced
– 1 small onion, finely chopped
– 2-3 garlic cloves, minced
– 2 tablespoons butter
– 1 tablespoon olive oil
– 2 tablespoons all-purpose flour
– 2 cups vegetable stalk
– 1 cup heavy cream (or half-and-half for a lighter version)
– 1/2 teaspoon dried thyme (or fresh if available)
– Salt and black pepper to taste
