Ingredients
1 tablespoon coconut oil
1 medium onion, diced
1 medium carrot, diced
2-3 celery stalks, diced
2 large garlic cloves, finely chopped
1 tablespoon fresh ginger, finely chopped
1/2 small jalapeño, finely chopped
1 tablespoon ground cumin
1 tablespoon garam masala
1 teaspoon ground coriander
1 teaspoon mild chili powder
1 cup (200 g) French green lentils
5 cups (1.25 liter) vegetable stock
1 can (14 fl oz / 400 ml) coconut milk
2 cups (100 g) baby spinach
Juice of 1/2 lemon (optional)
A handful freshly chopped cilantro (coriander)
