1.Prepare Vegetables:
Heat olive oil in a large skillet over medium heat.
Sauté shredded carrot, zucchini, and chopped cabbage until cooked through.
Season with sea salt and black pepper.
2.Prepare Egg Mixture:
In a large bowl, beat eggs.
Add chopped green onion, salt, and sugar. Mix well.
3.Combine and Bake:
Preheat oven to 350°F (175°C).
Combine sautéed vegetables with the egg mixture.
Pour into a greased casserole dish.
Top with green pepper rings and grated mozzarella cheese.
Bake:
Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown.
Serve:
