Instructions
Prepare Lobster:
Boil salted water with lemon and bay leaf. Add lobsters, cooking for 8-10 minutes until red. Cool, remove meat, and reserve shells.

Make Sauce:
Melt butter in a saucepan. Cook onion and garlic until soft (3 mins). Stir in flour, then whisk in wine. Simmer to reduce by half. Add cream and cook until thickened (3-5 mins). Stir in mustard, tarragon, paprika, salt, and pepper. Add lobster and half the Gruyère, melting the cheese.

Bake:
Preheat oven to 375°F (190°C). Fill lobster shells or ramekins with the lobster mixture. Top with remaining Gruyère and Parmesan. Bake for 15-20 minutes until golden.

Garnish:
Cool slightly, garnish with parsley, and serve with lemon wedges.
