🥧 Asparagus cake for Easter 🥧

1. Preheat the oven to 200°C (400°F). Grease a round cake pan (approx. 10-inch diameter) with a little butter or oil.

2. Roll out the puff pastry and place it in the prepared cake pan, pulling up one edge. Prick the dough several times with a fork to prevent it from rising during baking.

3. Wash the asparagus, trim the woody ends, and cut into approximately 5-cm-long pieces. Blanch in a pot of boiling water for 3-4 minutes, then drain and refresh in ice water to preserve the color.

4. Heat the olive oil in a pan and sauté the chopped onion until translucent. Remove from heat and let cool slightly.

5. In a bowl, whisk together the eggs, cream, grated cheese, salt, pepper, and nutmeg. Add the cooled onion and parsley and mix well.

6. Spread the blanched asparagus pieces evenly on the puff pastry. Pour the egg and cream mixture over the asparagus, ensuring the asparagus is well coated.

7. Bake the asparagus tart in the preheated oven for about 30-35 minutes, until the surface is golden brown and the filling is set.

8. Remove the tart from the oven and let it cool slightly before cutting into slices.
